100% Garganega: this variety was introduced in the Classic area 2,000 years ago by the Romans.
Selection from old vines, more than 40 years old.
Vineyards are located in the Monte Foscarino: basaltic-volcanic soil and south-east exposure of the vines.
Fermentation takes place in used barriques. Prior to racking, batonnage is carried out every 6 weeks for about 6 months. Fining for 6 months in stainless steel vats.
Great ageing potential – 10-15 years.
An absolutely superb Italian white with an enticing, lifted nose showing succulent aromas of honey, apricot and herbs. The honeyed palate shows stone fruit flavours, a slight hint of spice and a long, intense length. From one of the best producers of Soave, this is one complex and powerful Italian white not to be missed. Single vineyard Soave picked late and fermented in 2/3 year old barriques. Shows amazing concentration of Garganaga’s chamomile and elderflower notes.
Try with fish risotto, sushi, poulty and cheese.
