The first craft distillery in Ireland gives you a new whole new style of Irish whiskey. Single grain, aged first in American bourbon barrels and finished in Spanish Oloroso sherry casks. A new and unique style of light and floral whiskey distilled in a Coffey still from a mash bill of Irish malted barley and corn. Aged slowly in Ireland’s temperate, maritime climate for three and a half years in American oak first-fill Bourbon barrels before finishing for a final six months in Spanish Oloroso sherry casks. The oak barrels impart the beautiful vanilla thread you’d expect to run through an Irish whiskey – the Bourbon barrels impart deep, robust chocolate and caramel notes, while the Oloroso casks lighten the palate with fruitier notes and nutty tones.

Hints of rich dark fruit on the nose, notes of cherry, raisin fig and nutmeg – shades of Christmas pudding. Sweet creamy on the palate, with butterscotch, honey and peppercorn giving way to sweet bourbon cask notes, dried fruit and brown sugar. leading to ginger spices on the finish.
