Cabutto Barolo 2015
Founded in 1920 and run today by Osvaldo and Bruno Cabutto. Cabutto’s winery is located in Vergne, the highest of Barolo’s surrounding hamlets. It sits next to the historic Castello della Volta, with their nebbiolo vineyards Bricco Viole and La Volta surrounding the cellar.
The bouquet is full, complex and enveloping, with a flowery scent of dried roses, violets, liquorice and leather. Cabutto Barolo is robust and chewy but with a soft and elegant finish. The wine undergoes a long maceration on the skins after fermentation, aging for nearly 3 years in big Slavonian oak barrels to soften the tannins. Once bottled it undergoes an additional few months ‘resting’ before release.
